boneless, skinless chicken breasts
- 4
ounces fresh mozzarella cheese, sliced
- 2
medium tomatoes, sliced
- 1/2
cup fresh basil leaves
- 2
tablespoons balsamic glaze
- 2
tablespoons olive oil
- Salt
and pepper to taste
Instructions:
- Preheat
your oven to 375°F (190°C).
- Using
a sharp knife, carefully cut a slit horizontally in each chicken breast to
create a pocket. Be sure not to cut all the way through.
- Season
the inside of the chicken breasts with salt and pepper.
- Stuff
each chicken breast with equal amounts of mozzarella cheese slices, tomato
slices, and fresh basil leaves. Press the ingredients gently into the
pocket.
- Secure
the opening of each chicken breast with toothpicks to keep the filling
intact.
- Heat
olive oil in an oven-safe skillet over medium-high heat.
- Place
the stuffed chicken breasts in the skillet and sear them on each side for
about 2 minutes until they turn golden brown.
- Once
seared, transfer the skillet to the preheated oven and bake for about 20
minutes or until the chicken is cooked through and the cheese has melted.
- Remove
the skillet from the oven and let the chicken rest for a few minutes.
- Drizzle
the balsamic glaze over the chicken breasts before serving.
- Remove
the toothpicks carefully, and slice the chicken breasts diagonally.
- Serve
the Caprese stuffed chicken breasts with a side salad or your favorite
vegetables. Enjoy!
