Caprese stuffed chicken breast


 Ingredients:

  • 2 boneless, skinless chicken breasts
  • 4 ounces fresh mozzarella cheese, sliced
  • 2 medium tomatoes, sliced
  • 1/2 cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, carefully cut a slit horizontally in each chicken breast to create a pocket. Be sure not to cut all the way through.
  3. Season the inside of the chicken breasts with salt and pepper.
  4. Stuff each chicken breast with equal amounts of mozzarella cheese slices, tomato slices, and fresh basil leaves. Press the ingredients gently into the pocket.
  5. Secure the opening of each chicken breast with toothpicks to keep the filling intact.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Place the stuffed chicken breasts in the skillet and sear them on each side for about 2 minutes until they turn golden brown.
  8. Once seared, transfer the skillet to the preheated oven and bake for about 20 minutes or until the chicken is cooked through and the cheese has melted.
  9. Remove the skillet from the oven and let the chicken rest for a few minutes.
  10. Drizzle the balsamic glaze over the chicken breasts before serving.
  11. Remove the toothpicks carefully, and slice the chicken breasts diagonally.
  12. Serve the Caprese stuffed chicken breasts with a side salad or your favorite vegetables. Enjoy!
