Healthy Recipe: Turkey and vegetable stir-fry with brown rice

 


Ingredients:

  • 1 pound turkey breast, thinly sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 carrot, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 cup mushrooms, sliced
  • 4 cups cooked brown rice
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, sesame seeds

Instructions:

  1. In a bowl, marinate the turkey slices with soy sauce and oyster sauce. Set aside for 15-20 minutes.
  2. Heat one tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the marinated turkey slices and stir-fry until cooked through, about 5-7 minutes. Remove the turkey from the skillet and set aside.
  3. In the same skillet, add another tablespoon of sesame oil. Add the minced garlic and grated ginger, and stir-fry for about 1 minute until fragrant.
  4. Add the sliced onion, red bell pepper, green bell pepper, carrot, broccoli florets, snap peas, and mushrooms to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  5. Return the cooked turkey to the skillet and stir-fry with the vegetables for an additional 2-3 minutes to combine the flavors.
  6. Season with salt and pepper to taste. You can adjust the seasoning by adding more soy sauce or oyster sauce if desired.
  7. Serve the turkey and vegetable stir-fry over cooked brown rice. Garnish with chopped green onions and sesame seeds if desired.
